Soil and climate
Clay and limestone. Three vineyards make up this cuvée: ”Les Vireuils du Dessus”, south-eastern exposure and very limestone soil; ”Limozin”, under the Meursault Charmes; and ”Les Grands Charrons”, a stony and hot place, southern exposure.
Chardonnay, qualitative rootstock.
Average age: 45 years, 10,000 plants / ha. Yield: 38 hl / ha.
Durable and environmentally friendly
Pressing in whole grapes with a light settling followed by immediate setting in piece. Alcoholic fermentation with indigenous yeasts and malolactic in barrels.
On lees, so-called ”reductive” aging without racking, with riddling without SO2 for 11 months.
Rich and mineral, it has all the characteristics to refine with aging: nice reduction on the nose (toasted hazelnuts) with notes of peppermint, verbena, citron with a beautiful depth.
