Sustainable and environmentally conscious culture

Whole grapes sorted without SO2 with twice-daily punching down for 3 weeks. Alcoholic fermentation with indigenous yeasts without artificial thermoregulation. Malolactic fermentation in barrels.

On lees, reductive aging without racking, with riddling without SO2 for 13 months and then 3 months in foudres.

Round and structured, it is balanced and consensual. Its fruity and greedy side associated with a beautiful tannic and mineral structure gives it a fleshy and complex shape.
