Durable and environmentally friendly

In whole grapes sorted without SO2 with daily punching down for 2.5 weeks. Alcoholic fermentation with indigenous yeasts without artificial thermoregulation. Malolactic fermentation in foudres.

On lees, reductive in foudres without racking, with riddling without SO2 for 12 months.

Beautiful dark red color. It is floral (peonies, roses) and fruity (peach) with hints of pepper. It is a fleshy and structured wine with roundness due to the clay and mineral due to the granite sands. It has a developed bouquet and and richness. It is appreciable now but cut for the guard.
